Certainly the food processing - indispensably yet is still too underdeveloped in West Africa. But this does not mean that one does not find in inspiring initiative! Visited in Dakar, the Institute of Food Technology develops solutions to reduce post-harvest losses and implements them throughout Senegal.
The Institute is much more than a research center. It builds on the transfer of skills to sustain the developed technologies. Training, monitoring and updating of skills, quality monitoring ... allow local ownership of technologies and methods used within the Institute. Moreover, the National Fund for Agricultural Research in the Institute which draws much of its funding, supports only projects that result in a concrete implementation. All these projects aim to use agro-processing techniques to develop local productions abandoned or unused sub products.
Thus a plant in Tambacounda (Eastern Senegal) product since 2008 based vinegar surplus banana producers. In Ziguinchor, the capital of Casamance, a semi industrial unit managed by a GIE designs for its vinegar-based dehydration food preservation varieties of mangoes normally not consumed as judged too stringy (photos below). Casamance still Society Dried Fruits enhances drying technologies (solar, craft, mixed ...) to market since 2002 various dried fruit ranges. These initiatives contribute significantly to reduce losses but also help create jobs in the regions.
Each time the ITA was the catalyst and allowed dehydration food preservation the development and implementation of these technologies. dehydration food preservation But the Institute still has many projects in the pipes. Between the cashew apple juice (the very high nutritional qualities), clarification of technology and manufacture of beverages, syrups, jams ... many initiatives should continue to emerge across the country. These projects fit in a relevant way in different national agricultural development plans which contributes to their sense and implementation of facilitation. Brakes are still some inherent in the development of food processing in West Africa such as lack of quality packaging and marketing ... a failing that must bring the ITA to surround himself with competent actors to sustain its action.

Beautiful initiatives !! The solutions to move towards a less gaspillante agriculture, wealth be better for the different actors necessarily pass through support for changes in agricultural production initiatives. The fight against food insecurity must also pass away.
